Twenty-eight-year-old Domhnall Macrae is one of our Harris distillers, a keen shinty player, and part of a young homegrown team of whisky-makers alongside Thomas Macrae, Rebekah Morrison and head distiller Norman Ian Mackay. Known to most here as 'Dol', he shares glimpses of a day in his life and how our island enterprise is helping to make a real difference to his life here in our community.

PROUDLY FROM THE ISLE OF HARRIS

After more than a decade of distilling, we are proud to introduce you to our new signature dram, boldly bringing our island’s name to the fore and tying the whisky even closer to our distillery and well-loved gin. The Isle of Harris Single Malt Whisky is a new expression which encapsulates our lightly-peated island style and has been carefully created by our local distillers and blenders. This is a wonderfully approachable single malt, inviting a more relaxed way of enjoying our spirit, without compromising quality or character. As always, every drop has been made, matured and married in this special place we call home.

MADE, MATURED AND MARRIED IN THE OUTER HEBRIDES

All spirits in our new recipe have been distilled here in the small harbour village of Tarbert through our gentle mashing, long fermentations and patient cask-maturation across the ever-changing seasons in the coastal township of Ardhasaig, just a few short miles from the distillery. Our warehouses sit exposed to the North Atlantic, where the island’s elements encourage the whisky to unfold slowly and with restraint before finally being blended to our recipe and returned to casks to be ‘married’ for a minimum of 12 weeks to bring additional harmony prior to bottling.

FULL OF OUR ISLAND'S CHARACTER

We wanted to create a spirit that feels both distinctive and approachable, without losing any sense of place. With notes of butterscotch, floral sweetness and gentle spice, Isle of Harris Single Malt Whisky is lightly peated and matured in a combination of ex-Heaven Hill and Buffalo Trace bourbon casks, and ex-Oloroso sherry casks for a smooth and complex profile. Our dram is made by a homegrown team of spirit-makers, trained from scratch with everything done by hand, eye and nose to capture those ideal flavour characteristics so beautifully inspired by our island.

MADE TO BE POURED, SHARED AND SAVOURED

Bringing the very best of the distillery’s signature fruity, floral and vibrant style together, the Isle of Harris Single Malt is made to be enjoyed. It is a dram designed to be opened and poured rather than sitting on the shelf or collected, a whisky that is as much about connection as it is about craftsmanship. It can be savoured equally as a sippable whisky for quiet moments of appreciation with family, or shared with friends in creative cocktails or highball serves. BUTTERSCOTCH, FLORAL, SPICE

There’s butterscotch and iced cherry Bakewell tart on the nose. A pastry-shop sweetness gives way to bright fruit and delicate floral notes, with hints of boiled fruit sweets and a lingering warmth of spice. Rich buttery caramels unfold on the palate with a touch of sweet clove and ginger. All this is balanced by the signature dry, flinty character of our Isle of Harris spirit. The finish is long and creamy with a gentle hint of Outer Hebridean peat smoke. The combination of bourbon and Oloroso casks brings warmth, sweetness and gentle spice, while the light peat adds depth without overpowering the spirit.
