A New Whisky For The New Year

 


Christmas came early for us this year, as Saturday 22nd December 2018 became a quietly momentous day here at the Isle of Harris Distillery, particularly for our team of distillers.
 
At 3 p.m. that afternoon the first three barrels of our island spirit officially became legal Scotch whisky after spending three years and a day in an ex-bourbon oak cask.
 
To mark this historic moment, our founding distillers Kenny Maclean, Billy Fraser, Donnie Macleod and Domhnall Macleod gathered in the Tarbert warehouse to open Cask No.1
 
After removing the cork bung and sharing a few words in his native Gaelic, Head Distiller Kenny poured the boys a glass of their handiwork to enjoy.


   


Needless to say there were plenty of big smiles and much excitement expressed at the drinking of this very special dram.
 
We were particularly pleased as this was the result of the first spirit we produced back in 2015, made prior to any ‘optimisation’ of the distillation process being carried out.
 
While definitive conclusions cannot be arrived at from sampling a single cask, we're happy to report that we are more than a little optimistic about its potential.
 
Although obviously a young, relatively immature dram it was already showing a surprising complexity and we enjoyed the variety of flavour notes appearing in our glass as we sipped.


   


It will be a few more years until we bottle and release something worthy of bearing the name 'The Hearach Single Malt’, but from what we tasted that day, we're confident it will be worth the waiting.

As we leave 2018 behind, the closing of the year has brought with it an exciting glimpse into the future and much to look forward to here in Harris, and beyond.
